Mango Rice(mamidikaya pulihora)

Hi!Mango rice is one of the healthy rice dish.The key to this dish is mango which gives a tangy  flavor balanced with a fragrant tempering of dals,chillies,curry leaves and crunchy peanuts.This is usually prepared for Ugadi as we celebrate season of fresh mangos.


Ingredients
Raw Green Mango(grated) - 1cup
Rice cooked(each grain separated) - 2 cups
Roasted Peanuts
salt


For Tempering
oil - 2tsp
mustard seeds(aavalu) - 1tbsp
bengal gram(senaga pappu) - 1tbsp
urad dal (minapappu)- 1tbsp
Red chillies - 3
Green chillies - 3
Ginger(grated)
Hing - pinch of
Curry leaves


Procedure
1.Take a wide mouth pan, heat oil add mustard seeds when they crackle add bengal gram,urad dal let them fry for a min.Add the Red chillies,hing, Green chillies,grated ginger,turmeric,salt and curry leaves.Toss it for a while.
2. Add the grated mango and stir it for few mins.(5min) add the peanuts to the grated mango.


3. Finally add the cooked rice and mix it nicely and switch of the stove.


Pulla Pullaga mamidikaya pulihara ready to serve
  • If you are preparing in more spread the cooked rice in a wide plate and then add the tempering and use your hand to combine all the tempering well with the rice.

Tomato Rasam
"...............................kammati charu"

Hi!Tomato Rasam is a very regular diet in the South Indian household.This is one of my favorite rasam.The tomatoes in this rasam can be kept as pieces or ground into a puree or both. Serve it with hot rice, topped with ghee and a South Indian vegetable of your choice, like bhendi fry, carrot curry etc. Simply delicious.


Ingredients
Tomatoes - 3
Green chillies - 2
Salt
Turmeric
Garlic pods - 2
Cumin seeds(crushed)
Pepper corns(crushed)
Corriander leaves
Rasam powder(optional)

For Tempering(thalimpu)
oil
Jeera
Red chillies
Mustard seeds
Hing
Curry leaves

Procedure
1. Boil the tomatoes till the skin separates from the inner part.


2. let it cool,take out the skin and mash or grind the pulp.


3. To the pulp add tomato pieces,water,salt,turmeric,greenchillies,garlic(crushed),jeera,peppercorns(crushed),and let it boil for 10 mins.
4. For tempering, heat oil, add mustard seeds, jeera ,curry leaves,red chillies once they crackle add garlic,Hing. Fry little and add it to the tomato rasam.
5. Finally add corriander leaves.



Your Tomato rasam is ready to serve with rice....hmm..yummy......:)

Raddish(mooli) chapathi/mullangi chapathi)

Hi! Todays recipe is a quick and nutritious. Radish is one of the vegetable which is not used regularly by most of them as other vegetables.But this is the vegetable that should be added to our everyday recipes.So this can be one of the method that can increase our diet with more healthy.





Ingredients
Radish - 1(medium size)
whole wheat four
salt
oil - 2tsp
water


Procedure
1. Grate the Radish finely.
2. Add the grated radish,salt,oil to the whole wheat flour and very little amount of water and make a soft dough.





3. Let the dough stand for 15min.And again knead the dough once.

4. Make small  balls, dip each one into dry whole wheat flour, and roll out into thin circles.
5. Place a flat, ungreased griddle on the stove at medium low.Place the rolled chapathi on griddle Turn it after a 1/2 min then place the roti on the flame on full high then it puffs up immediately turn to the other side it may puff up again and tiny brown spots appear.take it to a plate.

Simply you can Place a flat, ungreased griddle on the stove at medium.place the rolled out chapati on griddle and cook both sides untill brown spots appear.apply oil when its cooking is optional.

Your Radish chapathi is ready to serve with any kind of curries.


  • Use very less water when making the dough because radish looses water.

Capsicum Rice/Bell Pepper Rice

Hi!This is the recipe which i learned from my friend.It is very quickly to make.Delicious too...Capsicum blended with fresh spices powder... 


Ingredients
Capsicum -1Big
butter or ghee - 1 or 2 tbsp
Cooked Rice - 1cup


For spice powder
Red chillies - 3 or 4
urad dal
bengal gram
peanuts(groundnuts)
mustard seeds
cumin seeds
curry leaves
salt
garam masala powder - 1tbsp
Corrainder leaves


Procedure
1. Take a wide pan add all the ingredients(add curry leaves at last) under the spice powder list.and make a dry roast(without adding any oil).Let it cool.


2. Add the roasted ingredients to the Mixer and make a fine powder.
3. Heat the same pan with 1 or 2  tbsp of ghee or butter and add the chopped capsicum.Fry them until they are cooked.
4.Add the spice(grinded) powder and salt to it and fry until the powder got nicely mixed with the capsicum pieces.
5. Add the cooked rice and stir until the rice is mixed with the powder and capsicum.


6. Finally add the finely chopped corriander leaves and switch off the stove 


Your Capsicum Rice is ready to serve.
