Mix Vegetable Upma
using rava

Hi!mixed vegetable upma is my all time favorite breakfast from my childhood.My mom always tries to add more vegetables in every diet because i used to refuse eating vegetable dishes much with rice.She feels atleast adding vegetables in my snack,brkfast,etc will make my diet more nutritious.Upma is usually made with rava or semolina.There are many ways Upma is prepared; indeed, every upma cook usually will incorporate variations in flavour when making Upma.Lets see my flavour of upma...




Ingredients
Rava - 1cup
Green chilies - 3
Onion(chopped) - 1
Tomato(chopped) - 1
Carrot (sliced) - 1
Cabbage(chopped) - small piece
Beans
Cashewnuts - handful
Curryleaves
Corriander leaves
Ginger(thinly sliced) - 1tsp
Oil - 2-3tsp
Cumin seeds - 1/2tsp
Mustard seeds -1/2tsp
Urad dal - 1/2tsp
Bengal gram/senaga pappu -1tsp

Procedure
1. Dry roast the rava until it just turn brown.set aside.
2. In a large sauce pan,add oil.After heating add mustard seeds and wait till they splutter.Add cumin seeds,urad dal,bengal gram,curry leaves,green chilies,ginger. and chopped onion.fry until they are transparent.
3. Add all other vegetables and fry until the rawness go.
4. Add 2cups of water,required salt and bring it to boil.


5. Pour rava with one hand and mix it with other parallelly inorder to avoid lumps.


6. Upma is done when all the water is absorbed by rava.
7. Put lid and switch off the stove.Let it stand for 2mins and serve.

  • Here i used store bought roasted rava.If you have that skip first step.

Uthappam
lentil "Pizza" with ur own toppings

Uthappam is a south Indian breakfast.This is one of the healthier one. My mom makes this recipe with leftover idly batter but some of them prepare with dosa batter also.Uthappam is basically prepared with batter as a base and with different toppings with your choice  like chopped onion,green chilis,etc
Here is the uthappam with my own toppings..hope you like it.


Ingredients
Idly batter mix with salt - 2cup
Chopped onion - 1/2
Grated carrot - 1
Green chilies - 2
Cumin seeds - 1tsp
Coriander leaves
Grated Ginger - 1tsp
oil - 1tsp

Procedure
1. Pre-heat a non-stick tawa or griddle and spread a tsp of oil over it.


2. Pour a ladle full of batter and spread it, thicker than a dosa (about 1/2″- 3/4″ thickness).


3.Top it with finely chopped onions,coriander leaves, grated carrot,cumin seeds,grated ginger and green chillies.


4. Cook on simmer with a lid for 5min or until cooked.


Your healthy uthappam is ready for breakfast.

Butter Naan
"soft withought using yeast"

Naan is my all time favourite indian bread.Whenever i got to restaurant without any second thought i order Naan..:)when i started my own kitchen i tried in making with yeast.since 1yr i m doing the same.One day i was lacking with yeast,still i want to eat,then  this recipe was changed by mom with some alterations unexpectedly and  it turned out well, and  was awesome.So i would like it share with you.

Ingredients
All purpose flour - 2cups
curd(thick) - 1/2cup
milk(warm) - 1/2cup
Sugar - 1/2tsp
Salt - 1tsp
Baking soda - 1/2tsp
Ghee/Butter - 3tsp


Procedure
1.Mix the flour,salt,baking powder nicely.


2.Pour milk,curd,sugar in the flour.


3.Mix well and knead the dough with your finger tips not very hard.


4.Let it rest for 2-3hrs covered.
5.Knead the dough softly at the time of making and make even sized balls.


6.Dust the rolling platform generously with maida and roll it and pull one edge to make a tear shape.


7.Heat tawa and place the rolled one on it and cover with lid.after a minute you could see puffed up.



8.Place that puffed one top of the direct flame(very high).Turn it again on other side,You can see brown spots.



9.Apply Butter/ghee on both sides and serve hot...

Paneer Tikka

Paneer Tikka is a Soft, juicy chunks of paneer marinated in masala and then grilled with veggies! This is a great dish & easy to prepare at home.This is "oven cooked" version.this can be made in BBQ also which gives smoky flavour..really yummy....But lets see to make in oven.







Ingredients
Paneer cubes 
Tomato
Bamboo Skewers
Green Pepper/Capsicum
Onion
For Marinating
Salt
Red chilli powder (acc to ur taste)
Garam masala - 1tsp
cumin powder - 1tsp
corriander powder - 1tsp
lemon juice - 1tsp
Yogurt - 1/2 cup
Oil - 1tsp




Preparation
1. Cut the Tomato,Green pepper,Onion into cubes.(paneer,tomato,onion,capsicum all cubes should be the same size)
2. Mix all the spices,lemon juice,yogurt,oil for marination.
3. Add all the cubes of Paneer,Tomato,Onion,Green Pepper to the marinade and mix well.


4. Let the Paneer marinate for 4-5 hrs in refrigerator.
5. Thread the paneer,onion,tomato,Green Pepper alternatively on pre-soaked bamboo skewers.


6.Broil the paneer in the oven on high.




7.Cook the paneer for 10min on one side and 6-8min on other side.or till they are slightly brown.


8.Once they are cooked switch off the oven let them stand for 2min and serve.
Your Paneer Tikka ia ready to serve.


  • Every oven is different and varies so do keep an eye ....don't burn it.

Vankaya Karam/Stuffed Brinjal Fry
"Simple & Superb"


Vankaya Karam is a quick,simple&tasty recipe which is andhra special.This lovely recipe can be a side dish with dals/sambar/rasam and rice.This gets me excited whenever I try to cook it for the day’s meal.Coarsely/Fine ground spices stuffing for the brinjals that are roasted on slow fire till they are cooked and  achieve a succulent yet crisp texture. Small, purple tender brinjals work best for this recipe.




Ingredients
Vankayalu/Brinjals - 1/4Kg - Wash,make + quarters and apply oil
Oil - 1tspn
For Stuffing
Corriander seeds/Dhaniyalu -1 1/4tsp
Cumin seeds - 1 1/2
Methi seeds - 1/4
Chana dal/Bengal gram/senaga pappu - 1
Urad dal/Minapappu - 1 1/4
Dried Red chili - 3-4(acc to ur taste)
Curry Leaves 
Asafoetida/Inguva
Ground nuts - 2tspn
Tamarind(very small) or Dry mango powder or Chaat masala for sourness 
Salt
Turmeric powder




Procedure
1. Take a wide pan dry roast all the above ingredients under "for stuffing" and make a fine powder.It should not be wet.












2. Stuff that powder to the brinjal.
3.Take a wide pan(small or big acc to ur no of brinjal)add 1tspn oil Place the stuffed brinjals in the oil and cook on high flame for 4-5 mts. Now, cover with lid and let them cook on medium flame for 10 mts. Keep checking in between and stir fry to ensure they don’t burn or stick to the pan

4. Now on low flame nicely roast the brinjals without lid. It should take 30mts apprx  for the brinjals to cook inside and be well roasted.


Your Vankaya karam vepudu/Stuffed brinjal fry is ready to serve with rice,dal/sambar..hmm....yummy:)



  • If the brinjals are big and not very tender.then first saute them in oil till they are half cooked/become soft later stuff the fine powder and again nice roast the brinjals.You too can have the tasty yummy fry.
  • Remaining powder can be stored in a air tight container and can use it for next time or other vegetable like Bitter gourd etc
