Kodi guddu Mulakkaya/Kodi guddu mulakkada/Egg & Drumstick Curry

Hi!Kodi guddu mulakkaya is one of the best combination curry that i love.There are many ways to cook eggs like pulusu,masala etc buut cooking with vegetables like drumsticks gives different flavour and small variation.This is an excellent spicy gravy which can go with simple white rice.This is my version of cooking i mean my mom..:)
There are 2 ways of adding eggs in this recipe.First way is that roasting eggs and making curry and second one simply putting slits(straight cuts) to the eggs and adding them when the gravy is boiling.I will show you the both ways of cooking.the choice is yours.I used to cook the first way but one day my athamma said that when you roast them we loose the vitamins of it.I light roast them when making pulusu only...Its completely your choice.




Ingredients
Hard Boiled Eggs - 3
Drumsticks - 1long cut into 2'pieces.
Onion - 1(big)
Tomatoes - 2(small0
Green chili's - 3(slitted)
Ginger Garlic paste - 1tsp
Turmeric Pwd - 1/4tsp
Red chili powder - 1tsp(adjust)
Garam masala pwd - 1/2 tsp
Oil - 2tsp
Salt to taste
Coriander Leaves - handful



Procedure
1. Finely chop the Onions ,Tomatoes and Green chili's.


2. Add oil to a cooking vessel once heated,slowly add the hard boiled eggs and roast till it turns light golden colour on medium heat.After they get roasted take aside on a plate.(careful while frying).



3. In the same oil add the slitted green chili's,chopped onion and saute them until they turn light brown in colour.Add ginger garlic paste and turmeric.Fry again until it looses its rawness.




4. Add the finely chopped tomatoes and put lid.(reduce the flame).Meanwhile it will get soft and cooked stir in the middle.Add all the spices and give a mix when the tomatoes become mashy.




5. Add the drumsticks, mix it for a while and add water(apprx 11/2 cup of water)and finally add eggs and put lid.Let it cook for 10min-13min in medium heat.




6. Check for consistency and finally add coriander leaves and switch off the stove.(I like the consistency to be thick gravy.)
