Soy Granules Fry/Andhra Veg Kheema

Hi!Todays recipe is that which can be prepared in very less time.I do this when i am getting late for the meal.There is a story behind this recipe whenever i make this recipe i remember the situation.In my childhood i attended the function in a village with my mom.as you all know in villages its not a buffet system of serving.When they are serving this recipe me & my mom asked not to serve non-veg still they did,at that time my mom's aunt told that its not keema(minced meat of lamb)its a soy granule fry.We were surprised,when we are tasting the dish we still have doubt...It was 100% tasted like kheema.I love non-veg so obviously i loved this fry and i always ask my mom to cook very frequentlly.She also enjoy in making because it takes only few minutes.Later when i grew i could know the importance of soya(i.e very high in protein).It has many health benefits,i will try to list out later.Lets go to the recipe.






Ingredients
soy granules - 1cup
Onion (big)- 1
green chillies - 2
ginger garlic paste - 1tsp
Oil - 2tsp
salt - req
Red chilli powder - 1tsp
Garam masala powder - 1/2tsp
Crushed cashew powder - 1 tsp
Coriander leaves - handful

Procedure
1.Soak the soy granules for 10min in water.
Before Soaking

2.Drain the water completely and squeeze the water from the granules by using hand so that excess water can be drained.

3.Take a pan,after heating add 2 tsp of oil.Add green chilies,chopped(small) onion and fry until it turns brown color.
4.Add turmeric,ginger garlic paste and fry until it looses its raw smell.

5.Add the soaked soy granules and mix nicely and fry for 2-3 min.

6.Add salt,red chili powder,garam masala powder,cashew powder and very little water(1/2cup)just to absorb all the spices.and put a lid for 4-5min apprx

7. When all the water is absorbed take the lid and stir continuously till all the moisture is absorbed.
8.Finally add coriander leaves and switch off the stove.

Your Soy granules fry is ready to serve with rice/roti.
  • You can cook with green peas is one combination
  • Any leafy veg(usually mom cooks with fenugreek leaves)
  • Potato and granules.
