Vankaya endi nethallu koora/Eggplant & dried Anchovis curry

Vankaya nethallu is one of the best combo...Here eggplant/vankaya we use is "white one"...Nethallu i m using are dried one.I missed this curry from long back recently i noticed this dried fish in china store.My mom makes few recipes with dried anchovis this is one of them.This is a thick gravy.Anchovis are high in calcium and protein.

Eggplant/Brinjal/Vankaya(white) - 1/2lb
Dried Anchovis/nethallu - 1/2cup
Green chili - 2
Onion - 1(big)
Red chili powder - 1tsp
Garam masala powder - 1/2tsp
Coriander leaves
Oil - 2tsp

1. Remove the heads of the dried anchovies and and clean with water thoroughly and drain the water completely and set aside.

2. Chop the Brinjal/eggplant/vankaya and onion and set aside.

3. Take a pan add 2tsp oil after heating add the cleaned anchovies and fry them until they are brown in colour (careful dont burn them) and set aside in a bowl.

4. In the same oil add the chopped onion and green chili and fry until the the onion turns light brown in colour.

5. Add the chopped brinjal and add pinch of salt and cook them with lid open for 7-10mins.Till they become soft and half cooked.

6.Add the fried anchovies and give a mix.

7. Add red chili powder,turmeric powder,req salt, and add water.Let it cook for 10mins or till it is completely cooked and looses out oil.

8.Add pinch of garam masala powder and mix.simmer it for 2mins with lid open.all the water should get absorbed.It should be a thick gravy.Finally add coriander leaves and switch off the flame.

  • Adding salt is noticeable, becoz dried fish are salty so adjust according to it.
