I love sea food...found fresh fish yesterday.Usually when we make fish fry we use lot of oil but now a days i am using less than 1 tsp oil for fry by not compromising the taste..This takes time but worth in doing..As usual tips was told by my mom...
Here i am using tilapia..
Ingredients
Fish (with bone)
Salt
Red chili powder - 11/2tsp
Coriander powder - 1/2tsp
Cumin powder - 1/2tsp
Turmeric powder - 1/4tsp
Garam masala powder - 1/4tsp
Lemon juice - 1tsp
Curry leaves - few
Coriander leaves
Procedure
1. Clean the fish thoroughly by adding little salt to water.Drain the water completely.Add salt,spices,lemon juice and make a paste.Rub the fish pieces with paste and marinate for 15-20mins.
2. Take a pan add 1/2-1tsp of oil add curry leaves,place the marinated fish and cook for 13-15mins with lid.The flame should be in low.
3. Take the lid and flip the fish to other side and cook for 10mins with lid.
4. Take out the lid now, almost the 90%fish get cooked. now let the fish cook for 3-5more mins(without lid) until all the moisture get evaporated and nicely browned all sides.
5. Garnish with coriander leaves

- When we marinate we usually use ginger garlic paste.Here i skipped using it bcoz it makes fish stick to the pan.I used to think if we dont use the paste it wont be tasty but i m wrong it was TASTY.
- Putting lid makes fish to cook nicely with its own oil and wont spread the smell all over house.
- The spices we are adding should not dominate the flavor of fish.
- using curry leaves we can avoid the smell of sea food.
