Hi!Todays recipe is a regular dish "ridge gourd curry"(beerakaya koora)but still i want to share with you bcoz sometimes we will not be knowing small things. Though it is a regular one its a wonderful dish in taste and easy in preparing.The nutritional value of gourd makes it suitable for maintaining optimum health, weight lose. It has excellent cooling properties.Adding little bit of milk gives some more taste to this dish.
Ingredients
Beerakayalu/Ridge gourd - 2 big
onion(big) - 1
milk(apprx) - 2 spns
green chillies-3
garlic pod-2
red chilli - 1
curry leaves
bengal gram -1 tsp
mustard seeds - 1/2tsp
cumin seeds - 1tsp
urad dal -1 tsp
oil - 2 tbsp
Procedure
1. Wash the gourd , peel the skin of it and cut into small pieces.
2. Take a pan, heat the oil add the garlic pods,green chillies,urad dal,mustard seeds,red chillies and curry leaves.
3. Add the sliced onion into the pan and fry it until they are transparent.
4. When the onion turned into brown add the pieces of gourd and pinch of salt and cover with a lid.
5. Stir the mixture for every 5 min.
6. When the ridgegourd(beerakaya mukkalu) is cooked add 2-3 tbsp of milk and stir till the mixture looses out the oil(there should be no moisture left).
7. Switch off the stove.
Your Ridgegourd curry is ready to serve with rice or roti..

- Add milk only when you are sure that the ridge gourd is cooked
- Add very little 2-3 tbspns, the taste of milk should not dominate the actual taste of ridge gourd.it should just add the extra flavour.
- I remember my mom saying eating milk mixed curries are good for health(reduce gastric prblm).
